Tacos Yeshua
The streets of Mexico City's Historic Center offer a vast culinary scene, and on Del Carmen Street, the aroma will draw you into Tacos Yeshua from blocks away. Here, the specialty is beef offal, slow-cooked with expert technique before being served in a taco.
Comidista Tip: Order the tripa (chitterlings) extra crispy, and if you love cheese, try it as a volcán (on a toasted tortilla).
The heart, liver, and suadero (confit brisket) tacos also deserve an honorable mention, but watch out for the pajarilla (spleen)—it has an extremely strong, gamey flavor.
